Golden “Cookie” Granola
I have sat on this Golden “Cookie” Granola recipe for a couple of weeks. I have had the preschool plague. My daughter brings home these lovely germs from preschool. I have also slacked on my kimchi eating this fall but I am headed to the Korean market this week so I can re-up my gut health for the winter.
Instructions
Preheat oven to 375°
Mix all the ingredients together with a spoon or rubber spatula on a baking sheet — lined with parchment paper or a Silpat.
Pat the granola into a thin layer, the more together it is, the more it will form a crunchy cookie-like texture.
Bake 10-15 minutes, until crispy like a cookie. Every oven is different, this is not a project to walk away from.
Take out of the oven and let cool for at least 30 minutes. Once cool, break up the clusters, leave big chunks — these are the best parts!
Add desired toppings like salted and roasted pepitas, nuts and dried fruit.

Golden Pumpkin Spice
- 1 tablespoon cinnamon, ground 1/2 teaspoon ginger, ground 1/2 teaspoon cloves, ground 1/4 to 1/2 teaspoon turmeric, ground (the heavier you go, the spicier) 1/8 teaspoon nutmeg, ground 1/16 teaspoon black pepper, ground
- Mix all ingredients together in a small bowl or jar. 2. Store up to one month in an airtight container.
Note:
- I don’t add any nuts, seeds or fruit to my granola, it’s just oats. I put salted and roasted pepitas on mine just before I eat it. You can add your toppings in after the granola is cool.
Pro Tip:
- DO NOT break up the clusters too much. That’s the beauty of this granola it’s like a crispy cookie magic granola.
Store:
- in an airtight container up to five days (mine never lasts longer than a day — it’s that good). For gifts these work great in little glass jars.

- this is the perfect host/hostess gift, make a giant jar! Make tiny jars for a dinner party or holiday dinner — guests cab have breakfast for the next morning.
How to Eat:
- straight up, over thick yogurt like Siggis, over almond milk, or on top a thick smoothie bowl.
