Avocado Hummus + Avocado PSA {How to Avoid Getting Cut}

This week is the Super Bowl and I am craving ALL the snacks. 

The recipe below is easy peasy and toddler approved! Don’t like cilantro, try adding parsley or skip it!

Ingredients

1 — 15.5 ounce can of chickpeas, drained and reserve the liquid

1/4 cup of the chickpea liquid (you can add 1 to 2 tablespoons extra to make it smoother)

1 clove of garlic, chopped

1/4 cup tahini

1/4 cup fresh squeezed lemon juice, about 2 lemons, plus more to taste

1/2 avocado

1 teaspoon soy sauce or tamari, organic preferred

1/2 cup of cilantro leaves only, packed (you can use stems too, if you want)

5 cranks of fresh ground pepper (or more)

¼ teaspoon of sea salt (or more)

Garnish: (Optional)

1/2 avocado cubed

10 cherry tomatoes, halved

1 teaspoon of olive oil

3 cranks of pepper

1/8 teaspoon of salt

 

Instructions

  1. Place all ingredients (except garnish 1/2 avocado, tomatoes, etc) in a food processor, pulse until smooth. If you want it smoother, add a few tablespoons of the reserved chickpeas liquid. Taste the hummus and season with extra salt and pepper, if you like.

  2. Mix all the garnish ingredients together. You can also add in extra cilantro leaves. Place mixture on top of the hummus as garnish or fold in, it's up to you!

  3. Eat with crudité, pita chips, tortilla chip or snack of your choice.

  1. If your avocados aren't ripe, place them in a paper bag with a banana.

I have a dusty old hummus recipe that I was thinking about making this week but it is tedious. I made it before I had kiddos. It requires peeling the skin off of each chickpea, one by one. While it does make an amazing silky hummus, mama is definalty not peeling chickpeas! The recipe below is easy peasy and toddler approved! Don’t like cilantro, try adding parsley or skip it!

Avocado PSA:

  • Cutting your hand while improperly cutting an avocado can lead to a serious injury. To avoid an emergency room visit: DO NOT CUT AN AVOCADO IN YOUR HAND. Also, use a sharp knife and if you don’t have one, use a serrated knife. I have looked at WAY too many “how to cut an avocado” videos that are wrong!

  • Most of the top “how to cut an avocado” videos, show you to cut an avocado in your hand –at NO POINT whether you are slicing it, taking out the pit (leave on the board, do not do this in your hand), or slicing the flesh (leave it on the board or take out the flesh with a spoon and cut it on the board).
