Cooking Hack: Perfect Fluffy AF Quinoa
I found a tip years ago on Food 52 to use less water than most packages suggestion and to put a towel between the put and a lid after the quinoa cooks to absorb moisture. It’s the only way to make quinoa, in my opinion.
I get a lot of questions about soaking + AC vinegar. It helps with absorption of nutrients. In my opinion, all quinoa needs to be rinsed (even if it says pre-rinsed).A fine mesh strainer is your friend, you can order one in the shop

Ingredients:
1 cup quinoa
1 tsp. apple cider vinegar for soaking
1 3/4 cups of filtered water
Instructions:
1. Rise and soak the quinoa with 1 tsp. apple cider vinegar and enough water to cover for at least 30 min.
2. Rinse and drain with a fine mesh strainer.
3. Put the quinoa in a pot with the filtered water.
4. Bring to a boil and then cover. Cook for 13-15 min on medium low.
5. Take off stove and place on a heat proof surface.
6. Take lid off and place a clean towel between the lid and pot. Let it absorb the moisture for 15 min.
7. Take lid + towel off, fluff w a fork and enjoy!
Storage: Keep up to five days in the fridge.
