Roasted Veggie Blender Soup with Crunchy Grain-Free Nut & Seed Topping
This is your new five-minute meal. The bone broth can be store bought or homemade. You can also make this soup with veggie stock or filtered water. You can use cooked or frozen veggies like cauliflower, peppers, tomatoes, carrots, butternut squash, and broccoli.
Pro tip: Roast veggies and store them in one cup portions in the freezer so you can pop them out, mix them with broth, and enjoy a satisfying meal.
Optional add-ins: 1-2 Tbsp. coconut milk for healthy fats and the juice of 1/2 a lemon or lime.
Topping ideas: Sliced raw radishes, microgreens, fresh herbs, or the Crunchy Grain-Free Nut & Seed Topping (see recipe below).

Feliz Latinè Heritage Month! It’s celebrated September 15th through October 15th. I am a proud Latinè, my father is from Chile. I am excited to share my heritage through a paid partnership with Pinterest this month. One of the deepest ways I’ve connected with my Latinè heritage is by drinking ceremonial cacao daily. It’s a plant medicine that has been drunk for thousands of years by the Olmecs, the Mayans, the Toltecs, the Aztecs, the Incas, and other cultures. It’s known as a heart opener and it’s cracked mine wide open to opportunities and the potential of my life.
